Winter warmer – Sweet Potato Soup

Winter is an easy time to eat the right foods. There is nothing more comforting than a nice hot bowl of soup. Here is one of our favourite recipes taken from the Knife, Fork and Band Cook book by Sally Johnston, this book is available from our practice and at “The Weightloss Shop” online store. This is a fantastic tool for people that have had ANY type of weightloss surgery. From bands to sleeves and has some yummy foods for all phases from fluid, to puree to soft foods. Sweet Potato Soup (serves 4) Oil Spray 3 cups  diced sweet potato 2 cups  salt reduced chicken or vegatable stock 1/2 diced onion 1 clove crushed garlic 2 tablespoons diced celery 1/2 cup grated zucchini 1/4 cup washed red lentils 1/3 cup low fat milk 1 tablespoon lemon juice Heat a large saucepan that has been sprayed with oil. Add onion, garlic and celery and gently cook until soft. Add sweet potato, zucchini, lentils and stock and simmer until the lentils are soft. Add capsicum and remove from heat. Leave to cool slightly before pouring into a blender or food processor. Puree until soup is thin enough to drink through a straw. (if on liquid phase) or until all contents are smooth. Whilst pureeing, slowly pour in the milk and lemon juice. Return to saucepan and reheat gently before serving, but do not boil. Enjoy
