Today’s recipe comes from our Beauty Therapist Alison. She is into “Blender Muffins” at present. All ingredients are thrown in the blender and wizzed and then baked. Sounds simple? Well it is.

We did a flour free version with protein powder in a mini muffin tray to make them more healthy and portion friendly.

1 cup natural peanut butter

2 large eggs

2 medium sized very ripe bananas

1/2 teaspoon baking soda

1 teaspoon vanilla

2 tablespoons honey (optional) we added it for this recipe

1 lrg scoop protein powder or 1/2 sachet

Optional topping, dark chocolate chips, cranberries, white choc chips, almond flakes or rasperries

pre-heat oven to 180 degrees

Place ALL ingredients in blender and blend until well combined and it has a thick consistence

Pour batter into muffin tin

add any toppings

Cook for 8-10 minutes

Cool on a rack and enjoy
