Our recipe this week is from Melanie, she makes these yummy protein Balls for healthy snacks that even the kids eat. Protein Balls 10 dried figs soaked in water for 15 minutes 8 pitted dried dates 2 tbsp coconut oil 1/2 cup oates 1/2 cup coconut flakes or desiccated coconut 2 tbsp peanut butter 2 large scoops flavourless protein powder 1/3 cup almonds 1/3 cup macadamias 2 tbsp cocao powder Blend nuts on a food processor until broken up not to fine (unless you don’t want the crunch, then blend more fine) blend oats coconut flakes protein powder until fine Take figs out of water and blend until a smooth paste roughly chop dates or chop in food processor combine all dry ingredients and then add coconut oil, peanut butter dates and figs Make into small balls and roll in coconut flakes store in fridge to cool or in the freezer to set for 10 minutes I make a big batch and keep my protein balls in the freezer, getting out 6 or so at a time. My children even eat them frozen.
